Creamy Cashew Mayonnaise (vegan)

This comes out rich and thickly creamy. Cashew mayonnaise is also super quick to make and perfect for the time that you need a quick dressing or spread. Quick and easy, smooth eggy flavor due to the black salt, and a fine-textured result, and while the texture not like real mayo with that lightness but the flavor more than compensates!

Ingredients:

1 cup raw washed Cashews ( large pieces), soaked for 4 hours
1 teaspoon Black Salt
Small Pinch Garlic Powder
2 Tablespoons Extra Virgin Olive Oil
2 Tablespoons Lemon Juice
1/2 cup Boiling Water

Cookware and Utensils:

-High powered Blender
-Measuring Cup set
- Measuring Spoon set
- Silicone Spatula 

Way to go...

1. Place all ingredients in the blender in the order given above.


2. Blend from low to high (1-10 then low to high on the Vita-mix) for at least 60 -90 seconds.  You want to achieve the smooth creamy texture and to warm the mayo just slightly( if your blender doesn't warm the mayo don't keep it running until it does; it's okay if it doesn't warm, it it is just an added feature of the Vita-mix)
 3. And walla: Creamy Cashew Mayonnaise!
